I have not discussed this with anyone really but my biggest obstacle to managing my sugar levels is my constant snacking. I can do ok with meals… I have done amazing at eliminating carbs (breads and pasta) but my sweet tooth is constantly getting in my way. I even tried keeping my levels really low so I can cheat but you know where that got me? Back up to a 13 A1C, which really sucks because 6 months ago I was at a 7.5 A1C. I am certainly not proud of this considering the fact that I know better.
Fact: 6MM (23%) Hispanics in the United States have diabetes compared to 20MM of non-Hispanic whites.
So this shoppertunity popped in my inbox and I though it would be interesting to play around with creating snack options that are are healthy (but yummy) and most importantly keep me from high glycemic options that are so much more accessible. As you may already know, I hang out with Rebecca “Gitana” Torres so I am inspired by the “Remix”…
So I decided to REMIX my snacks.
Popsicles (frozen ice in all forms) are a weakness so I thought of creating some cool blends using Glucerna shakes and incorporating the protein bars for that extra sweet kick. For those of you who do not know Glucerna helps people with diabetes really satisfy those hungry moments without spiking glucose levels. Glucerna is a meal replacement plan with bars and shakes. Its slow-digesting carbohydrate formula (also known as CARBSTEADY®) may help some diabetics with weight loss and monitoring blood sugar levels. The foods are low in calories and sugar. It is available in a variety of flavors and best of all, is available without a doctor’s prescription. These products are a key component to the this really helpful meal plan that I will be starting on Monday
The idea sounded great (in my head) especially since I been using these shakes for my really busy day little over a year now. So I went shopping to my local Walmart to get some ingredients and while still in the aisle of the store I made a call and enlisted the help of my wife, Tina who is infamous for her creativity in the kitchen.
We found this Ice Pop Factory kits that we bought for our God children that will allow us to layer the flavors (by tilting the cart) in different stages of the process.
Here is what she did…
She took the three flavors I bought (Vanilla, Strawberry and Chocolate) and used the Ice Pop Factory molds to create layered flavored popsicles.
The products we used were the Hunger Smart Shakes and the Glucerna Mini Bars

THE RECIPE IS SUPER SIMPLE
Ingredients: Any of the Glucerna shakes and a matching Glucerna Bar
First – take your base flavor and fill 1/3 of your mold, tilt if possible and freeze.
Then… take one of the Glucerna bars (I love the Oatmeal Raisin) and cut it into a piece (or pieces) that will fit the mold…push it in until it is level with the layer of frozen shake. Note: you can make it a layer or just a small chunk for added flavor. The picture below is a Vanilla / Chocolate with a chunk of Oatmeal Raisin
Pour in your second flavor until the mold is full.
FREEZE and ENJOY!!!!
The pop is delicious and it gives me the ability to snack and help me to keep my sugar levels on point. So… I hope that you enjoyed this super simple recipe but I would be remiss if I did not share some other great resources to help yourself (or those you love) manage their Diabetes.
