Valentine’s Day Recipe: Plantain Crusted Pork Loin with Guava Sauce

Now anyone with money can go out and drop lots of money at a fancy restaurant and make it an amazing night. Keep in mind that you are at the mercy of just how good that restaurant is (from how the food tastes to how good the service is) any misstep can actually ruin the night.

Also, many of you have stayed strong on your resolutions to eat healthier and save money and that is awesome… but what if I can show you a way to do all that and create the most amazing experience for your loved one on that special day?

Sounds like a WIN/WIN/WIN situation right?

I thought so too… so I  teamed up with @PorkTeInspira to share one of my favorite recipes with you on Facebook Live this past Friday February 10th so that you can have just enough time this weekend to plan your special date that will excite the senses.

You did not know I can cook? Fun Fact: My first professional job experience was a line cook at a family owned seafood restaurant in Queens and I eventually became an Executive Sous Chef/ Purveyor for Marriott International at the Merrill Lynch Headquarters in NYC.

 

So this recipe.. is tried and true and very special one to me. In my Live session I made a Plantain Crusted Pork Loin with a Guava sauce (perfect blend of sweet and savory) with a Tomato Avocado Cucumber Salad.

 

THE RECIPE

Plantain Crusted Pork Loin with Guava Sauce

2lbs. Boneless pork loin roast
2tbs. Sofrito
2tsp. Salt
1tsp. Ground black pepper
3 Cups plantain chips
3tbs. Olive oil

Preheat oven 425°F

Rub the pork loin with Sofrito until completely covered.

Place plantain chips in food processor. Process to fine crumbs.

Spread the crumbs evenly on a plate, roll the pork loin in the crumbs to coat.

Heat oil in a large skillet on medium-high heat.

Cook roast in hot oil until all sides are browned, about 8 minutes. The center will be pink.

Place skillet in center rack of the oven.

Roast pork for 15 minutes. Remove from oven.

Guava Sauce
1 cup guava paste, chopped
1 cup water, cold
2 tbs. Extra virgen olive oil
1 tbs. Adobo
1/3 cup onions, chopped
2 garlic cloves, minced

Combine guava, water, olive oil, onions, garlic in a small saucepan.

Simmer on low heat 5 minutes

Add Adobo. Continue to simmer for another 5 minutes.

Remove from heat and cool 10 minutes.

Pour into blender and process until smooth consistency.

Pour onto flat plate and place the roasted pork loin on top.

Or

Pour the sauce over the roasted pork loin.

I choose pork because it is a great value in a wide variety of cuts, can be a very healthy choice and it remains one of the most versatile meats to prepare.
