Making Time For Family (& Red Lobster)

This has been a season of change. The weather has changed causing me to consistently change plans… from missed meetings to cancelled trips and even dinners with friends have been affected since the Polar Vortex wreaked havoc on the East Coast. It has been extremely hard to have any quality time with the family. I am long overdue for a night out so this weekend I am thinking of taking my family out to Lobster Fest @ Red Lobster, especially since the twins are home from school for the weekend. It will be a good time to catch up and have a great dinner. So I am clearing the schedule on Sunday and bringing the family to enjoy Lobster Fest and a movie. The best part about it is that I know it will not be hard to convince everyone to go to Red Lobster, we are all die hard seafood lovers. The movie… that is going to be tough… but we still have time to negotiate.

So I am clearing the schedule on Sunday and bringing the family to enjoy Lobster Fest and a movie.

From what I hear they have expanded the selection to 9 different offerings… who would have ever thought it would get better than the Ultimate Feast?

  • Dueling Lobster Tails: A roasted Maine lobster tail topped with tender shrimp in a creamy garlic sauce paired with a golden-baked Maine lobster tail with crab-and-seafood stuffing. Served over mashed potatoes, roasted tomatoes and green beans.
  • Lobster in Paradise: A split Maine lobster tail fried in our signature coconut batter, spicy grilled shrimp and a lobster-and-shrimp bake topped with toasted crushed macadamia nuts.
  • Ultimate Surf and Turf: A Maine lobster tail baked with crab-and-seafood stuffing paired with a peppercorn-seasoned grilled sirloin topped with Maine lobster meat in a citrus-hollandaise sauce. Served over mashed potatoes, roasted tomatoes and green beans. (I think that this will be my choice)

Ultimate Surf and Turf (Delicia de Mar y Tierra)Call me crazy but Red Lobster was  where my love affair with Seafood started. My Mom loved seafood and craved it all the time when I was a kid, we could not afford to go there often but when we did… it was a real event. I remember that once I had the opportunity to chat with one of the cooks and ask him about how he cooks the lobsters. He made the conversation really fun and it left an impression on me. Many people do not know… but my first job as an adult was a prep cook at a very established seafood restaurant in Queens. I worked there for about 4 years working my way all the way up to Sous Chef. I have to honestly say it was one of the best work experiences ever. I am looking forward to telling my kids this story over diner on Sunday.
