In my quest to discover new and exciting cultural things to share with you all, I learned that in Argentina that Sofrito is actually called Quiquirimichi...and then I started reading the blog...and I started getting hungry...so I am not gonna write anything else...I will just share the article.
In the meantime , if you know any good Argentine restaurants you can suggest...let me know in the comments section.
PS...If I were Argentino, this site would be called "Quiquirimichi for Your Soul"
Buen Provecho...

Quiquirimichi isn't really sofrito (maybe in a very loose definition), it's our hot sauce from Salta in the northwest of Argentina - a blend of olive oil, lots of garlic, sweet paprika, chilies and salt - all uncooked, and used especially on top of locro but also other dishes. Generally then topped with a good handful of chopped green onions too.
