Quiquirimichi isn't really sofrito (maybe in a very loose definition), it's our hot sauce from Salta in the northwest of Argentina - a blend of olive oil, lots of garlic, sweet paprika, chilies and salt - all uncooked, and used especially on top of locro but also other dishes. Generally then topped with a good handful of chopped green onions too.
